Dinner Ideas that are Simple yet Satisfying

Dinner should be the easiest meal of the day. There’s no need to overcomplicate it—just focus on protein and veggies cooked with healthy oils for a meal that leaves you satisfied and nourished.

Simple & Delicious Dinner Ideas

  • Protein & Veggies – The easiest formula: grilled, roasted, or sautéed protein paired with non-starchy vegetables cooked in olive oil, butter, or coconut oil.
  • Soups & Salads – A warm, comforting soup or a fresh, hearty salad with protein and healthy fats makes for a perfect meal.
  • “Noodle” Dishes: Try out your favorite pasta dishes using lupini bean noodles. They can be costly, but are so filling that they go a long way.
  • Try Different Cuisines – Experiment with new flavors! Many global dishes are naturally insulin friendly when you skip the starch.

Time-Saving Dinner Tips

Store Leftovers
Every time you cook, make extra and store leftovers for quick, easy meals when you don’t have time to cook.

Cook in Bulk
Buy chicken or meat in bulk and cook it all at once (bake, broil, grill, pressure cook, or roast). Portion it out, vacuum seal, and freeze for later. My favorite is to make several pounds of cooked chicken thighs in the pressure cooker and vacuum seal them in portions of 5.

Slow Cooker & Instant Pot Meals
Use a slow cooker or pressure cooker to prepare tender, flavorful meals with minimal effort. Great for busy days!

Frozen Vegetables
Keep a variety of frozen vegetables on hand for quick, easy side dishes. They are just as nutritious as fresh vegetables and require minimal prep.

Simple Salads
Stock your kitchen with salad ingredients for fast, nutritious meals. Mixed greens, a protein source, some cheese, toasted nuts, and oil & vinegar dressing make a filling, tasty, and easy dinner.

Batch Cooking
Prepare large batches of soups, stews, or meats that can be portioned out and frozen for future meals. Saves time and keeps you on track.

Eating Out? No Problem!

Dining out doesn’t have to derail your goals. The easiest choice is to order a protein with a double side of veggies—a simple request at most restaurants.

Dinner doesn’t have to be complicated or stressful. Stick to real food, keep it simple, and make it enjoyable! Cooking at home gives you the most control, but even when dining out, a few smart choices will keep you feeling great.
